Burrito Bowl Dinner
Ok, I wish I would have taken pictures to go with this post, but oh well. Since I gave up a lot for Lent this year, I have come to realize that my diet has not been as healthy as I thought. Needless to say, I have been looking for creative ways to get the whole family involved because I think this will be better for everyone. One of the dishes I tried this week went over so well that we ate it two nights in a row. Since I have had a few people ask me about it, I thought I would share my Burrito Bowl recipe with all of you.
Black Beans (for us, 2 cans)
Avocados (for the 5 of us who ate it the other night, it took 2)
Rice (about 1/4-1/2 cups per person)
Salsa (We used organic Mango Salsa)
Cook the rice and beans separately, cut up avocados and add onion to taste (can also add some salsa to the mix for extra flavor). Put everything into bowls on the table and let everyone create their own using the rice as your base. Enjoy!
I have a four and seven-year old as well as teenagers living in my house. Everyone loved it. My kids have said it is their new favorite dish.
If you would like something sweet to go with it, I also have learned how to make my own reduced calorie orange soda. Mix equal parts carbonated water and orange juice. Add Stevia to taste. Enjoy!
