Bear Haven Mama’s Fabulous Tuna and Everything Salad

I am one day late in posting, but I wanted to say that I did some measuring over the weekend. I have lost 2 inches around my waist. Ok, so part of that may be due to illness, but I would like to think it is due also to my better eating habits. Also one thing I have noticed since I gave up processed food is that my skin has cleared up a bit. (Unfortunately, having children seemed to send my face into that of a teenager since I missed out on most of that when I was actually a teenager.)

Anyways, A few of my friends have been asking for more recipes, so I thought I would share this one which is a family favorite I have tweaked, and many of my friends have enjoyed this at my house as well. Even if you are not a tuna fan, I swear this isn’t that bad.

Lesa’s Fabulicious Tuna and Everything Salad


1 Head Romaine Lettuce

1-2 cans of tuna (in water, drained)

1-2 cups cooked peas (cooled and refrigerated)

1 package of dried vegetables (favorites here include the dried snap peas or green beans)

Parmesan Cheese shredded

Olive Oil

Make sure your lettuce is washed. Chop it and put it in a bowl. Add tuna and peas. Coat with Olive Oil (to taste). Refrigerate for about 30 minutes. Sprinkle in the parmesan cheese and top with the dried veggies. Enjoy.

You could also substitute Caesar dressing, but I rather like the Olive Oil. The dried veggies add a nice crunch without having croutons.
