Almond Coconut Bark Recipe

Ingredients:

2 bags of milk chocolate chips
1 cup of almond slices (we usually order online)
1 to 1  1/2 cups coconut flakes

Line a baking sheet with wax paper. Melt chocolate in a double boiler until smooth. Pour chocolate onto the wax paper. Sprinkle almonds over the chocolate. Cover chocolate and almonds with coconut. Freeze for two hours. Break into pieces and keep refrigerated.
That’s all it takes. Enjoy your delicious almond coconut bark!

What We Love About this Almond Coconut Bark

So…let me just start by saying, I love things that are simple to make. Because I have a brain injury, I tend to not like complicated recipes. I also get stressed out making and baking things during the holidays. When I started testing this recipe out, I realized this would be easy for me to make over and over again. Also, this recipe modifies well for people with food allergies!

For example, I cannot have much refined sugars, and I am allergic to dairy. I found a great substitute with the Hu Gems Chocolate. They are vegan friendly too, for those of you who are vegan! They melt well, and I can make my almond coconut bark, chocolate chip cookies, and buckeyes with them! I love having options!!!

Baking and candy making is time consuming. If you are doing it with kids, it can be frustrating as well. Adding simple recipes to the mix cuts out some of the stress, and it allows the kids to still have fun!

  2. Oh, I love this and want to try it!! My biggest problem is every time I get chocolate chips they “disappear” before I can make the recipe! Have to get several bags…..!

  3. I made a dark chocolate bark once. No nuts or coconut, but I added vanilla chips and a little bit of marshmallow in each. I liked them. The kids, I don’t think so much. I should have added pieces of candy in there instead of the marshmallow. I feel bad for you being allergic to dairy.! A lot of foods and ingredients have dairy in it! I have to try making your bark!
